One of my favorite cocktails is the classic French 75! It comes to the table with everything I adore: Champagne, gin, and lemon. I love drinking champagne after a long day but so many times I forget about ordering this classic gem! To amp this classic up a notch I have added the addition of beautiful raspberries. This simple syrup adds flavor and a beautiful color! Let’s cheers to gin and Champagne!

Ingredients:
- 1 ounce of gin
- 1/2 lemon, juiced
- 1 tablespoon of raspberry simple syrup (*recipe below)
- 3-4 ounces of Champagne
- 1/2 cup of ice
Instructions:
- Add gin, lemon juice, raspberry simple syrup, and ice to cocktail shaker
- Shake mixture then strain into champagne flute
- Top with champagne
*Raspberry Simple Syrup:
Ingredients:
- 1/2 cup of raspberries
- 1 cup of sugar
Instructions:
- In a saucepan combine sugar and raspberries
- Let it boil for until sugar dissolves
- Strain mixture and let it cool
- Extra syrup may be stored in a glass container for up to a week
