When I was approached by Lambay Whiskey to partner with a unique cocktail that fitted their unique whiskey I did my due diligence and discovered how unique this whiskey really was. This whiskey is distilled on a privately owned island off the Irish coast, which has all sorts of amazing wildlife running around, like wallabies and puffins; how awesome is that? I couldn’t get enough of the traditional Sidecar cocktail in France and wanted to mix one up with whiskey to see how it would go, and it turned out delicious. I used both lemon and lime juice, as I wanted to bring a more subtle citrus tang to the sidecar.

Recipe:
- 2 ounces of Lambay
- 3/4 triple sec
- 1/2 ounce lemon juice
- 1/4 ounce lime juice
- Sugar (for rim)
Method:
- Combine all ingredients in a cocktail shaker with ice
- Shake to chill and combine ingredients
- Rim your cocktail glass with sugar
- Strain into a rimmed cocktail glass
- Garnish & Enjoy!
