Tart Pineapple Punch

Beefeater is back at it with another #DrinkWithYourEyes competition and we created this delicious Tart Pineapple Punch cocktail to announce the competition, which is going live on April 25. When Beefeater approached us to participate in this collaboration they made a point to make sure we focused on sustainability, as it is one of their core values.

For this cocktail, we found a wonderful pineapple at the store and decided to use as much of it as possible, with minimal waste. Of course, it looks amazing as a cocktail vessel, once you can get it to stand on its own, and we were able to use the meat of the fruit to mix cocktails all day. Instead of trying to squeeze the juice out of the pineapple meat, we put whole pieces of cut fruit into the shaker with the rest of the ingredients to give a little more texture to the final concoction. Using the tart cherry syrup really added some depth in the final profile, and balanced the pineapple and lime juices just perfectly.

Method:

  1. Combine all ingredients in a cocktail shaker with ice
  2. Shake hard to chill and combine ingredients
  3. Strain into a carved out pineapple (or cocktail glass) over crushed ice
  4. Garnish & Enjoy!
