Rum Negroni Pineapple Sour

I love Negroni’s and wanted to make several variations to celebrate this week. I previously shared Negroni creamsicles, which are amazing. Today, I am sharing a new recipe that contains rum and pineapple juice. It is so good mixed with the Campari and the addition of the egg white adds a wonderful texture.

Ingredients:

  • 1.5 ounces of Zacapa Rum
  • 1 ounce of Camapri
  • 1ounce of vermouth
  • 1 ounce of pineapple juice
  • ½ lemon, juiced
  • 1 egg white
  • 1/2 cup of ice

Garnish: Pineapple slice

Instructions:

  1. In a shaker add rum, Campari, vermouth, pineapple juice, lemon juice and egg white
  2. Shake mixture for 20 seconds then add ice and shake again
  3. Strain mixture into serving glass
