Pistachio Fizz

by James Stevenson

Every Sunday my grandparents on my mothers side get the family together for lunch and it becomes an all day feast and everyone brings a dish and hangs out so when I’m home in North Carolina I make sure to go and see everyone as much as I can. This week my aunt bought a variation of a southern delight called Pistacio Cool Whip Salad (I don’t know how it is considered a salad). It was absolutely delicious and was sweet like a dessert but is consumed as a side with the main entree. Anyway, the main ingredient is cool whip and in with that there were prominent flavors of pistachio (from somewhere) and pineapple.

I just had to make a cocktail that resembled it when I got home and thought a Fizz was the best way to bring all the flavors together and still have a good balance of sweet and citrus. The pineapple was great for bringing balance and with the addition of lemon juice it really cut through everything else and bought a citrus tang to the cocktail. I decided to use rum in the place of the gin for this concoctions also as I felt it bought a little more character to the cocktail and the earthier tones worked great.
