I wanted to stay close to the original Negroni with my rendition, but as it’s so damn hot right now I thought I should “summerize“ my cocktail and keep it a little lighter and fresher than usual. If there’s one thing I have found with Campari it’s that it works deliciously with pineapple, so I added in a little juice for my variation and went slightly tiki with the serve, with crushed ice also. The sweet vermouth seemed a bit much with these ingredients so I found a deliciously, floral dry vermouth and it substituted delightfully.
- 1 ounce Beefeater Gin
- 1 ounce Campari
- 1 ounce dry vermouth
- 1 ounce pineapple juice
- Combine all ingredients in a cocktail shaker with ice
- Shake to chill and combine ingredients
- Strain into a cocktail glass over crushed ice
- Garnish & Enjoy!
