Maestro Clover Club

Today’s cocktail incorporates the Bacardi Gran Reserva Maestro de Ron in a re-invented classic; using the Maestro we are able to take the Clover Club which is usually regarded as a light fruity cocktail and give it more depth and character. If you don’t know about the Maestro you should, this is a rum that was created to take the Bacardi white rum line to the next level as a sipping rum but works amazing in cocktails.

We decided to create the Clover Club as it is one of our favorite cocktails and although it tastes great with gin we love showing off the versitility of rum and playing with the base spirit to give this beautiful classic cocktail more depth and flavor.

Recipe:

  • 1.5oz Bacardi Gran Reserva Maestro de Ron
  • ¾oz Lemon Juice
  • ¼oz Raspberry Simple Syrup
  • 1 Egg White

Method:

  • Separate egg whites into a separate vessel to make sure you don’t get any shell
  • Combine all ingredients into cocktail
  • Shake really hard with ice to emulsify the egg white and other ingredients
  • Strain out ice and shake again to give the foam a smooth frothiness
  • Fine strain into desired glass
  • Enjoy!

Raspberry Simple Syrup:

  • Chop raspberries into quarters
  • Add 1 cup of water and 1 cup of sugar into saucepan
  • Drop in raspberries
  • Simmer and stir until sugar is all dissolved
  • Strain out raspberries and set aside to cool down
