In the long dry bed of an ancient lake, Salt Lake City has thrived ever since the Transcontinental Railroad was connected by Promontory Point’s golden spike in 1869. Dig a little deeper today and you’ll come across Honest John Bitters, from their factory in the city if you look to the east, you’ll see the jagged peaks of Wasatch Range with snowy valleys that last all the way through to mid-summer. In this magical place, they handcraft small-batch elixirs that have been helping people from the beginning of time.
Their most recent concoction said to have been fashioned by modern-day crazy-like-a-fox alchemists, who now call this place home, is a range of apricot based potions. This new apricot line includes bitters, syrups, and a shrub; the earthy, floral palate accentuates the stone fruit and citrus nuances. Produced with a pure spirits-based, glycerin-free foundation; fused with organic ingredients, and bottled for your enjoyment, these products mix a damn good cocktail.
We couldn’t pick which one to use, so we ended up with a tiki-themed cocktail with a rum base, apricot syrup and apricot bitters. These products were perfect for accentuating the citrus in the pineapple and lime juices, as well as mellowing out the coconut cream, so the cocktail would be balanced and delicious to the last drop.
- 2 ounces Antelope Island Rum
- 5 ounces Lime Juice
- 1 ounce Pineapple Juice
- ½ ounce Honest John’s Apricot Syrup
- ½ ounce Coconut Cream
- 4 dashes Honest John’s Apricot Bitters
- Combine all ingredients in a cocktail shaker with ice
- Shake to chill and combine ingredients
- Strain into a Pearl Diver (tiki) glass
- Top with crushed ice
- Garnish with a lime twist, pineapple crown, and edible flower
