Blueberry Mimosa 

I woke up this morning and wanted it to be the weekend. Mimosa’s always remind me of weekend brunch so after work I decided to make this beauty. I had some blueberry juice left over from my spicy blueberry martini and I had a bottle of bubbles chilling. This mimosa took me right back to the weekend until I realized that it was still Tuesday! But honestly this was a two step recipe and super easy for a week day drink. It also seems fancy and will have you celebrating the pleasures of a normal old Tuesday night!

Ingredients:

  • 1.5 ounces of blueberry juice
  • 4.5 ounces of champagne

Garnish: 1 tablespoon of blueberries

Instructions:

  1. In a standard champagne glass add blueberry juice
  2. Fill glass to the top with champagne
  3. Garnish with blueberries
