Burnt Paloma Sour

I am a huge fan of the classic Paloma cocktail and love playing around with the infinite variations. I decided to make this one into a sour because the ruby red grapefruit is so delicious and a tart little lemon juice really brings it all together. The Monin winter citrus syrup is the best syrup for this season as it brings all the best seasonal flavors together and you can taste all the different citrus and herbal notes in each sip.



  • 1.5 ounces mezcal
  • 1 ounce Monin winter citrus syrup
  • 1 ounce ruby red grapefruit juice
  • ½ ounce lemon juice
  • 1 egg white



  1. Combine all ingredients in a cocktail shaker with ice
  2. Shake hard to chill and combine ingredients
  3. Fine strain into a cocktail glass
  4. Garnish with a burnt grapefruit slice for aromatics
  5. Enjoy!
